Classic French Demi-Glace made in the old world tradition of Escoffier from brown stock and Sauce Espagnole. Demi-Glace Gold® is reduced four times from the classic and allows you to make elegant finished French Sauces quickly and easily. Our low heat cooking techniques and 30-hour reduction process give the product a beautiful shine, flavor and texture, which make finished sauces that are glossy to the eye and decided in taste. It can be used full strength as a glace de viande substitute or can be diluted to a classic demi-glace or even further diluted to a classic veal stock. Classic White Wine Sauce 1 oz. (30 g) Butter ½ c. (125 g) Onions, finely diced 1 c. (250 mL) White Wine 1½ (45 g) Demi-Glace Gold® Sauté onions in butter for 2-3 minutes or until translucent. Add white wine and reduce by half. Add Demi-Glace Gold® and whisk until dissolved. Add dissolved mustard and then add enough water to reach desired sauce thickness. Strain the sauce and return to pan. Add salt and pepper to taste, and stir in additional butter if desired. Serve over pork or other grilled or roasted meats.

Glace de Poulet Gold® provides pure, intense flavor when used to enhance finished sauces or when deglazing directly in a roasting or sauté pan. It can also be used to enhance your stocks by adding 1-2 oz. per gallon, bringing deep flavor and roasted color to every batch of stock you make. One ounce (45g) of this amazing product yields 2-1/2 cups (450ml) of classic chicken stock that can be used for all your cooking needs. Or, use it with six parts water to one part Glace de Poulet Gold® to enhance the flavor and color of dozens of classic sauces. Mustard Tarragon Buerre Sauce 9 oz. (250 g) Butter, unsalted 3 T. (45 mL) Shallots, minced ½ c. (125 mL) Vermouth, dry 4 T. (60 mL) Double Cream 1½ oz. (45 g) Glace de Poulet Gold® ¼ t. (1.25 mL) Fresh Tarragon, chopped ½ t. (2.5 mL) Dijon Mustard White Pepper and Salt Sauté shallots in 30g butter. Add Vermouth and reduce until shallots are barely wet. Add cream and reduce by half. Add Glace de Poulet Gold® and whisk until dissolved. Add tarragon and mustard. Stir in remaining butter 15g at a time, swirling constantly to incorporate the butter slowly into the sauce. Our special Set of 3, Essence de Champignon Gold® can be used as a light-bodied sauce or stock to add deep rich elegant flavors to soups, stews, risottos, and pastas. Alternatively, it can be used full strength to add a beautiful mushroom aroma to most any finished sauce. Penne with Morels 1/3 oz. (10 g) dried morels or shiitake mushrooms 2 thick slices hickory-smoked bacon, cut crosswise into thin strips 1/2 c. (90 g) finely chopped shallots 1/4 c. (65 ml) medium sherry 1 T. (20 g) Essence de Champignon Gold® 1/3 c. (85 ml) heavy cream 1–2 sprigs fresh thyme Freshly ground black pepper 4 oz. (110 g) dried pasta Freshly grated Parmigiano-Reggianoul Soak morels or shiitakes in warm water for 30 minutes, drain and blot dry. (If using shiitakes, remove and discard stems, cut into thick slices.) Heat bacon in a large skillet over medium-high heat. When 1 T. (20 g) of fat covers bottom of pan, add shallots and continue cooking over medium heat until shallots are tender, 5 minutes. Stir in sherry and Essence de Champignon Gold® and boil for 1 minute. Add cream, thyme and black pepper, return sauce to a boil, then lower heat, stir in mushrooms and leave over low heat while cooking pasta. Cook pasta in boiling salted water until al dente, drain, combine with sauce and serve with Parmigiano-Reggiano on top.

One ounce (45g) of this amazing product yields 5 cups (1.2l) of classic chicken stock that can be used for all your cooking needs. Velvet Carrot and Ginger Soup 4 T. (60 mL) unsalted butter 1 lb. (454 g) young carrots, scraped and diced ½ c. (125 mL) finely chopped shallots 3 T. (45 mL) raw white rice 3 T. (45 mL) minced candied ginger 1 oz. (30 g) Fond de Poulet Gold® + 3 c. (750 mL) water Salt and white pepper to taste 3 T. (45 mL) finely chopped fresh chives Melt butter in a heavy saucepan. Stir in carrots, shallots, and rice. Cover tightly and sweat over medium-low heat until very tender, about 20 minutes. Scrape mixture into an electric blender. Add ginger and diluted Fond de Poulet Gold®. Process until completely smooth. Return to pan, season with salt and pepper, stir in chives, and heat until hot. Ladle into heated soup bowls and serve.
